Neige Premiere 2010 Miniatures (48 x 5cl)
In autumn, very ripe apples are harvested by hand and stored until winter has arrived. At the end of December, the fruits are then pressed and the freshlly extracted juice is placed outside in the extreme January cold, for up to six weeks.
Slowly the water crystallises and separates from the sugar. This process is called natural cryoconcentration. After a few days of intense cold, the concentrated must representing 1/4 of the initial amount of juice, is collected through gravity.
The extracted must is then placed in stainless steel tanks, where it ferments at low temperatures for at least six months before being bottled.
Tasting notes
Golden yellow in colour the aroma is of freshly picked apple with striking intensity.
Taste is crisp and flavoursome.
Perfect as an aperitif or to accompany sharp cheese (cheddar or goat), veined cheese (blue), or desserts.
Best served cold, Neige Premiere has long ageing potential and can be enjoyed for many years.
