La Gioiosa is one of Italy's leading Prosecco, sparkling and still wine producers. Based in Treviso in the heart of 'Prosecco country', La Gioiosa has consistently won awards across the globe and its quality wines are enjoyed my many. The winemaker freezes the Prosecco must prior to fermentation to ensure maximum freshness upon bottling.
Its name pays tribute to the old definition of the province of Treviso, "Marca gioiosa et amorosa" (Joyous and Amorous March) underlining the sociable lifestyle of its inhabitants.
Prosecco is a typical wine of the Veneto region. The production area extends from the plain of Veneto and Friuli with medium-textured soils of alluvial origin. Vines are trained single espalier, with double canopy and radiating systems with 2300 vines per hectare. Yield per hectare max 18 t/ha. Whole grapes are put into the pneumatic press for soft pressing and the resulting must, after a first racking, is put into controlled temperature tanks where it remains until it is used for the production of the sparkling wine.
Secondary fermentation:
The must with added yeast cultures is then put into vessels where fermentation takes place at a controlled temperature of 15-16C to enhance all the harvest fragrances. Upon reaching the required alcohol and sugar content fermentation is stopped by refrigeration. After a short settling period the sparkling wine is ready for bottling. "A Brut Prosecco, so drier than many and lower in sugar, hence the very modest 63 calories per 100ml, so less than 100 calories in a decent serving. It is foamy and frothy, with a crisp apple and lemon sherbet nose, the palate noticeably drier than many Proseccos, with plenty of lemony bite, but still enough pear and apple fruitiness to please fans of Italy's most popular fizz.
