RARE ROSÉ MILLÉSIME 2012
The Year 2012:
A thrilling vintage in Champagne. June and July were very cool before favourable weather returned in August.
Warm, dry days and cool nights continued through to harvest in mid-September, resulting in Champagnes with great finesse and ageing potential.
Tasting Notes:
Coppery, almost blue glints merge to give a soft hue of pink quartz.
The initial nose offers a bouquet of spring flowers. This fragrant elegance quickly increases in complexity and texture. Notes of tangerine, lychee and verbena alternate with hints of syrupy elderberry, of sweet almonds. Freshly picked dark crisp fruit (blackcurrant, blueberry, lingonberry). The nose is generous, heralding a vintage with exceptional potential.
Following an attach that is both elegant and generous, the velvety texture unfurls to offer minerality and subtlety. Initially the exuberant vitality of dark fruits and citrus is followed by the vibrancy, smoky notes and aromas of star anise and violets. Then the triumphant delicacy expresses a hint of vanilla.
Food Pairing:
Rare Rosé 2012 is the ideal accompaniment from appetizer to dessert.
Prawn Risotto, Braised or Red Meat, such as Black Angus, Roast Lamb Chops, Stewed or Roast Pigeon, Lightly Grilled Red Mullet, Grilled Lobster, Mozzarella Di Buffala

Winemaking:
The first fermentation took place in stainless-steel tanks. Once completed, the wine was racked and underwent full malolactic fermentation.
Rare Rosé 2012 marries 70% Chardonnay grapes, selected mainly from the Montagne de Reims region and 30% Pinot Noir (some as red wine) in a blend of eight crus.
The wine was kept on its lees for 9 years before disgorgement, when a dosage of around 8.5g/l was added.
