Details of production:
Chablis is in the Northern part of the Burgundy region. The “Premier Cru Montmains” is located South of the Commune of Chablis and is one of the more famous Premier Crus. Two particularly well-situated plots have been selected for the blend both with Limestone soils. After a cool and rainy winter and a frost episode in April, the warm and dry weather in spring was perfect for the flowering. In July and August the weather was more demanding but it became fine again early September with a true Indian summer which enabled a perfect maturation for the grapes. The harvest took place mid September under bright sunshine resulting in wines with very pure zesty aromas mixed with floral fragrances. Aging in oak casks (demimuids) for a period of 11 months.
Tasting notes:
Bright gold colour. Very fresh aromas of lemon and fresh honey. Beautiful mineral expression. Taut, precise and well-balanced. Well-crafted acidity. Refreshing aftertaste with a lingering minerality.
How to serve:
Pâté, sea scallop, turbot, poularde in a creamy sauce as well as many goat cheeses.
