Tasting Notes:
Elegant and fruity on the nose. It is persistent on the palate, with notes of fresh fruits, long finish with a subtle hint of hazelnut.
Regional Information:
The Champagne terroir has two major distinguishing features: northerly latitude and a dual climate that is subject to oceanic and continental influences alike.
The subsoil in Champagne is predominantly limestone. This type of subsoil provides good drainage and also imparts that particular mineral flavour found in Champagne wines.
Vinification Information:
The grapes from each of the crus are vinified separately and unlike many other houses, malolactic fermentation is avoided in the production of Champagne Choisel.
Excluding this process ensures mouth-watering flavours and an exceptional purity of fruit. The wines are then carefully blended to ensure a consistent taste and style.
After blending, each bottle is further aged for a minimum of two years before being released on the market.
