Federico Paternina Monte Haro (75cl)
METHOD OF DEVELOPMENT : De-stemming of the bunch and soft grinding of the berries. The fermentation was carried out in contact with skins and with several daily pumping over. The temperature was 25 ºC. Aging of 24 months with a racking every 6 months, remaining in the bottle a minimum of 2 years. American oak barrels with medium toasting.
TASTING COMMENT: Ruby color with tile irides, bright. With excellent reduction tone. Very elegant on the nose, given its fine aging bouquet and memories of vanilla. Very polished on the palate, fleshy and complex.
PAIRING AND TEMPERATURE: Roasts, red meats, game and cheeses. 17/18 ºC
