From the great 2007 vintage, this exemplary champagne, from the maker of Bollinger, has salty, peppery, yeasty, botanical fragrances on the nose and it is medium to full-bodied, rich and toasty with a long waiting trailing sensation.
Pairing with food:
For a friendly aperitif or a special occasion, or to accompany foie gras, a meat dish with mushrooms or truffles, game, but also fine cheeses.
Ayala Vintage will also pair very well with scallops in sauce, foie gras or lamb.
History:
One of the first 26 Grand Marque Champagne Houses, Ayala has had a honorable history since its initiation in 1860 when Edmond de Ayala got the heavenly Chateau as the settlement for his wedding.
Situated in Aÿ, in the heart of the Montagne de Reims vineyards, Ayala normally concentrates on Grand Cru Pinot Noir for its Brut Majeur and its Vintage Brut. Ayala is a "small" house, the artisan of champagne-production.
